Recipes_From_The_FridgeWhile making a standard Southern version of No-Bake Cookies, Cleave tried the originals, and found at first he didn’t care for them because of the oats in them, but changed his mind after the second day. The he couldn’t help himself. He then suggested I try making them with some other kinds of cereals. So I tried toasted oat O’s, then he suggested we just don’t use any grains at all, and set them in a 9 x 13 pan and cut them like fudge. Just WOW! Using E.S.P (Experimentation, Sensibility, and Practicality), we came up with an amazing candy that was an instant hit! Hope this works out for you as well as it did for me.

Peanut Butter Candy

3 cups sugar
3/4 cup butter
3/4 cup milk
1 tsp vanilla extract
1 1/2 cup peanut butter

Bring sugar, milk, and butter to a boil on medium heat. Boil for 2 minutes. Remove from heat. Add vanilla extract and peanut butter. Mix well. Pour into parchment lined 9 x 13 pan. Will set quickly. Cut into 1-inch squares when set.

I wish I had attempted this naughty treat back during Valentine’s Day, because this is the kind of stuff that makes men beg for more. (Case in point: Clisair!) White Day has come and gone, and even though I’m not really a designer purses or jewelry kind of person, seeing him going after the leftover frosting was enough for me.

So without anymore ballyhoo, here we go, bringing in the best of Southern American agricultural innovation together with the world’s favourite bar cookie, and few little crunchy surprises.


2 squares semi-sweet chocolate.
1/3 cup shortening
2 eggs
1 cup sugar
1 tsp vanilla extract
3/4 cup flour
16 mini peanut butter cup candies

Preheat oven to 350

Melt chocolate and shortening together in a double boiler. Add sugar, mix, then eggs, mix, then vanilla extract, mix, then flour. Blend well till all flour is well mixed. Pour into a greased 9 x 9 pan, and place the candies into the mix, evenly apart. Bake for 25 minutes.

Sniglet Of The DayUnipea (yew’ ni pee) n. – A peanut with only one compartment.

We all love peanuts, if our bodies allow us to have them. Those of us whom can access them boiled or roasted in their shells might run across the anomaly called the unipea. The general public is not really sure what causes these mutant peanuts to grow the way they do, but they are not any less tasty than the bigger peanuts in the bunch. The next time you are in a place that serves up peanuts in their shells, take a look at them. You might encounter a few unipeas while sipping a beer, or waiting for your dinner. These compact little peanuts pack lots of flavor in their little shells, and you should feel lucky that these unipeas did not end up in peanut butter or peanut paste. They were waiting there at that particular restaurant or sports bar for you to enjoy them. Not exactly sure how many out of the gazillions of peanuts harvested across the globe every year turn out to be unipeas, but it would be interesting to find out someday. Until then, enjoy your peanuts, and if you do find a unipea, save a dollar and buy a lotto on the way home. You might be luckier than you think.
