Whenever you hit your favourite Chinese buffet, how sure are you that you are getting something authentically Asian? Most likely what you come across is whinese food. This is Chinese cuisine that has been so distorted for American and Canadian palates, that it most likely does not resemble anything you might find at a restaurant in Bejing or Hong Kong. So much sugar, msg, and other things have been added, that if we ordered, say, Sweet and Sour Chicken in Miami, it would definitely not be the same thing in Shanghai. Some towns have Chinese restaurants that feature Mongolian barbeque, hibachi tables, or even a sushi bar, attempting to get the best of the Pacific Rim into one place, but even these can be a shadow of their true forms when dealing with North American diners. Since catching a flight to China is pretty much out of the question these day unless you have a good reason to do so, getting Chinese food that is not whinese food is highly unlikely, unless you learn to cook your own, or are lucky enough to have a friend who knows how to do it right.
