This is an experimental variation of the Simply Vanilla Crispy Cookies, and they turned out to be very nice, indeed. Light tasting, not too sweet, great with afternoon tea, coffee, or tropical drinks.

1 cup shortening
1 cup sugar
1 large banana or 2 small bananas, mashed
1 tbsp honey
1 tsp vanilla extract
1 egg
2 cups self-rising flour

These cookies are about as basic as it gets, and contain only five ingredients. They take hardly any time to prep, and each set can be done in about 10 minutes, or 20 if using a countertop oven. They are that easy! So if you are having a sweet craving, and don’t want to slip down to the grocers to buy ready-made cookies, these are perfect. You most likely keep these ingredients on hand if you bake often, or even if you don’t, so don’t hesitate to try them.

Simply Vanilla Crispy Cookies

1 cup shortening
1 cup sugar
1 egg
2 tsp vanilla
2 cups self-rising flour

Preheat oven to 350. Mix the first four ingredients together thoroughly. Add flour, and blend well. Roll into 1 inch round balls, and place about 2 inches apart on baking sheet. Flatten with a round glass coated with sugar on the bottom. Bake for 8-10 minutes in regular oven, or 20 minutes in countertop oven.
Yields about 3 dozen.
