TDF Honey Ketchup

Recipes_From_The_Fridge-150x150This ketchup is the very best that I can ever remember tasting. It is clean, light and yet bold as well. It has a smooth flavor that will make you never want to have another type of ketchup ever. This is what the condiment tomato sauce should taste like and is better than any store bought I can remember. Once you try this flavorful to die for ketchup you won’t want another kind ever.

Ingredients for TDF Honey Ketchup

6 oz. tomato paste
1/4 cup honey
1/2 cup rice vinegar*
1/4 cup water
1 tsp. salt
1/2 tsp. finely minced sweet onion
1/4 tsp. garlic powder
1/8 tsp. nutmeg
1/8 tsp. powdered clove
1/8 tsp. powdered ginger
1/2 tsp. basil (can be minced up with the onion)

*I use rice vinegar because white vinegar is made from corn.

Homemade Whole Egg Mayo in a Blender

Recipes_From_The_FridgeHere is a smart tasty mayonnaise recipe that is easy to make. You can make it any time you need to and with your regular blender that you use for drinks and smoothies. It takes in all about 15 minutes and my wife constantly begs me to make it, she thinks it tastes that good.

Before you begin you want to make sure you have a blender that is multi speed. You may wonder why this is so or why not make a large batch at once, the answer is simple, heat. I once tried to make a large batch and wound up with oily scrambled eggs instead of a spreadable condiment. If you have speeds that are too fast or the blender has to work too hard the oil will heat us and not create the emulsion that you need. It will literally cook your eggs instead of blending it with the ingredients that you use.

Homemade Fajita Seasoning Mix

Recipes_From_The_FridgeThere are times when you just want a hot and tasty seasoning mix to use whenever you want. For meat, or for cooking in general. This homemade fajita seasoning mix works for more than just spicey foods, it can be use even in place of pepper if you wish. It just tastes so good.

Fajita Seasoning Mix Ingredients
2 tsp. tapioca starch
3 tsp. chilli powder
2 tsp. salt
2 tsp. paprika
1 tsp. sugar
3 tsp. cumin
1 tsp. garlic powder
1/2 tsp. cayenne pepper

A note about the tapioca starch: Many times you just will not find this readily available on your grocery store shelves. This is not a problem if you have one of those nice new personal coffee grinders. If you don’t have one they are really cheap to get. Anyway, to make tapioca starch you would first buy some minute tapioca, the stuff you get to make tapioca pudding. Take and add about a quarter cup and grind it in the coffee grinder on the fine setting about 3 times. That would be about 60 seconds. You will now have a fine powder that you can use in place of regular starch. Some might wonder why you would do this, well there are some that have a problem with corn or gm corn and can’t use regular corn starch. This is a perfect alternative for those that have this problem with regular starch.

The following recipe can be made in as little as 10 minutes and ready to use in just a few hours. Even if you were to use it right away it is good, time gives it a bolder and richer flavor.

3 tbsp. ground mustard powder
1 tbsp. cracked mustard seed
1 tsp. salt (kosher or sea salt)
2 tsp. sugar
1/4 tsp. maple syrup
1/2 tsp. turmeric
1/4 tsp. paprika

1/4 tsp. tapioca starch
1/4 cup water
1/2 cup rice vinegar
