Recipes_From_The_FridgeI was looking for a new kind of dish to make for a wintry night, and had limited choices as to what to use for my main ingredient. Chicken and pork chops were frozen, but then i remembered that I had purchased some fresh market made sausage, great stuff, only four ingredients, pork, salt, pepper, and fennel! from Brickyard Market earlier that week, and it was still there, unopened, and soon the Taste Of Home casserole book was set aside for my own creation….

1 lb fresh sausage
1 cup macaroni
1 large carrot
1 cup broccoli
1 cup cauliflower
1 cup shredded cabbage
1/2 cup milk
3 tbsp flour
water
1/2 cup sour cream
salt, pepper, garlic powder
1/2 shredded Colby jack cheese.

preheat oven to 350 degrees. Cook sausage in skillet or wok till done, prepare macaroni according to directions on package. Stir fry carrots, broccoli, cabbage, and cauliflower and spices into sausage. Mix, flour, milk, and water as for making a gravy, add to sausage and vegetable mix until thickened, then add sour cream. Add cooked and drained macaroni to sausage mix, mix well, and transfer to greased 9×13 pan. Top with shredded cheese, then bake for 1/2 hour.

I was lucky enough to get off work early today, due to some scheduling mix-ups and overstaffing. When I came home, Cleave was watching our spindoctor state governor talking about how great the times are, and how so many jobs have been created during his admin, etc… etc… etc… Well, it seems the next Congressman for Florida’s District 1 thinks differently, and maybe the world should learn a few things from him. So, Musing Readers, take a few moments to see things from the South, and consider all points of interest. Let those you know that might live in this area from Pensacola eastwards to Chipley that NW Florida needs to see things from a better light than CNN or Faux News can show them.

Crispy Corn Fritters

1 cup self-rising flour
1 tablespoon sugar
1 egg
1/4 cup milk
1/2 cup whole kernel corn
Fat for deep frying
Confectioner’s sugar for dusting

DIRECTIONS

1. Resift self-rising flour and sugar together
2. Add egg, milk and corn. Stir until blended.
3. Drop batter into fat a teaspoonful at a time.
4. Maintain fat at 350 degrees and fry fritters until golden brown, turning once with a spoon to cook evenly.
5. Remove fritters from fat and drain on coffee filters.
6. Serve piping hot on warm platter. Sprinkle fritters with confectioner’s sugar before serving.
