This bread recipe was discovered by accident when I ran out of bread flour and had to substitute some self-rising flour in a bind. The results were just incredible, and very satisfying.
1 1/2 cups hot water
2 1/4 tsp yeast
2 cups bread flour
1 cup self-rising flour
2 tbsp sugar
2 tbsp oil
Stir the yeast into the hot water until it is dissolved, and let it set to activate for 15 minutes. Mix all other ingredients together in a large mixing bowl, then add yeast and water mixture. Mix by hand or using bread hook, if you are lucky enough to have one of those huge expensive mixers that do that sort of thing. Mix until you get a huge ball of dough, and knead for 10 minutes, or let the mixer do it. Let dough rise in a greased bowl for 30 minutes, covered. Punch dough down, then let it rise again for 15 minutes under that upside-down bowl. After second rise, place into a lightly greased loaf pan, and let rise for 30 minutes, covered with a hot, wet cloth. Once dough has risen again in loaf pan, slash the top three times with a smooth knife. Bake at 375 for 30 minutes. Do not preheat the oven. Take bread from loaf pan as soon as it comes out to cool.
