Semi Sweet Pickles – Corn Free Recipe

Recipes_From_The_FridgeHere is a great recipe for sweet pickles that just about anyone can make. It doesn’t take all that long to do and makes it so that you can make them just the way that you want. Best of all, there are no ingredients in it that are corn based, for those with the ever growing allergy trend. Even better this is not a complicated canning project, just good sweet yummy fun.

Semi Sweet Pickle by Cleave Ingredient List
3 baby cucumbers 6 in. long
1 cup rice vinegar
3 tbsp. sugar (6 for a really sweet treat)
1 tbsp. pickling spice
1/2 tsp. salt
1/4 tsp. garlic

Prep time: 10 minutes
Cook time: 15 to 20 minutes
Cool time: 0-30 minutes

NOTE: The amount of vinegar listed is the minimum. Some may feel more comfortable adding more, which is fine. Just don’t add too much or you will have more juice instead of pickle.

Take all of the dry spices and put them in a sauce pan. Add to that the vinegar and heat gently over a low heat till the sugar has dissolved the the liquid has cleared a bit. Once you have the clearness you want turn off the heat and turn your attention to the cucumbers.

Slice the cucumbers into approximately 1/4 inch slices. These are going to be the pickle chips when you are done. You could also use tiny 2 inch whole cucumbers if you are wanting to make a kind of gherkin sweet pickle. Once you have your cucumbers cut or prepared for pickling take and add them to the vinegar solution and return to heat.

Place the sauce pan on a medium heat or flame till it boils. Once it is at a rapid boil you will continue cooking the cucumbers and liquid for an additional 10 minutes. Once the time has elapsed, remove the pan from the heat and spoon the now pickles into a jar. Once you have transferred the cooked cucumbers you will pour the remaining juice and spices over them. Close and store in the fridge. These will keep for several weeks, that is if you don’t eat them all up before hand.

As you see, a simple and quick way to have pickles any time that you want without all the hassle of canning a big batch that you then have to store away. These can be made any time that you want, you can even add more sugar and vinegar to suit your own tastes. A perfect recipe to have for all those that are missing this wonderful sweet treat.
