Pumpkin Yeast Bread

4 cups bread flour
1/2 can pumpkin
4 tbsp sugar
2 tbsp cooking oil
2 1.4 tsp yeast
1/2 tsp salt
1 cup hot water
1/4 tsp pumpkin pie spice
1/2 tsp nutmeg
1/2 tsp ginger

Dissolve yeast into flour, and let it activate 10-15 minutes. Mix all ingredients together, then knead dough on a floured surface, about 10 minutes. Place in a greased bowl, and cover. Let rise for 30 minutes. Punch down dough, and let rise under upside-down turn bowl for 15 minutes. Shape into loaf, and set in greased and floured load pan. Cover, and let rise for 30 minutes. Using a very sharp, straight knife, slit the loaf in three diagonal cuts across the loaf. Bake at 375 for 30 minutes. Cool on cooling racks.

This was an experiment that ended in a phenomenal success! After having enough leftover pumpkin from making the Sinfully Delicious Pumpkin Sugar Cookies to make another batch, we were sadly out of eggs. Clisair suggested we try making a yeast bread with the leftover pumpkin, so we took our basic Italian bread recipe and tweaked it into this light-tasting, slightly sweet bread. Great alone, with butter and honey, or an amazing French toast, it could well become another autumn classic to be served at Thanksgiving, or during a Samhain feast. No matter how you serve it, your pumpkin lovers will love you all the more for it.
