Perfect Peanut Butter Cookies

1/2 cup butter or shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla extract
1 cup peanut butter
2 1/2 cups self-rising flour

Preheat oven to 350 degrees. Cream together sugar, butter, and brown sugar. Add eggs, vanilla extract, and peanut butter. Mix thoroughly, fold in flour until mixed completely through. Shape into 1 inch balls, and place about 1 1/2-2 inches apart on an ungreased cookie sheet. Press down cookie dough balls with a sugar coated fork to make a criss-cross pattern. Bake for 10 minutes until golden brown.

I have been using this recipe since the early 1980s. The butter adds a much richer flavour than the shortening, and these no-fail cookies are a classic hit no matter where you might take them. They can be placed in a biscuit tin for transport, and make a great gift for all those peanut butter lovers on your list when you just can’t think of what to give them, especially those whom might live thousands of miles away that rave about your cookies when you are separated. Imagine their surprise on the holidays when they open the box and say “Wow! So and so baked me peanut butter cookies!” Well, they taste much better than socks or bath products, but I’m sure Bath and Body Works might make some kind of peanut butter cookie scented soap or lotion some day. If they do, ladies, grab it up, because men seem to love that scent just as much as new cars or bacon.
