Cleave’s Bold Rich Mustard

Recipes_From_The_FridgeThere are times when things made for yourself just taste better and let you completely control the flavor. Mustard can be one of those that is easy to make and gives you an appreciation that you would not otherwise have for mustard sauce. It really is easy to make, don’t let anyone tell you different.

The following recipe can be made in as little as 10 minutes and ready to use in just a few hours. Even if you were to use it right away it is good, time gives it a bolder and richer flavor.

3 tbsp. ground mustard powder
1 tbsp. cracked mustard seed
1 tsp. salt (kosher or sea salt)
2 tsp. sugar
1/4 tsp. maple syrup
1/2 tsp. turmeric
1/4 tsp. paprika
1/4 tsp. garlic
1/4 tsp. tapioca starch
1/4 cup water
1/2 cup rice vinegar

A note about the sugar in the recipe, you can use brown sugar and omit the maple but seeing as I don’t like store bought brown sugar I make my own. 1 tbsp. of honey or maple syrup is added to each cup of white sugar to make a homemade brown sugar. It tastes so much better then store bought brown sugar.

The recipe is simple and straightforward. First take all of your dry ingredients, except the sugar, and place it in a bowl. Use a whisk to fold all the ingredients together, or a fork. I find that since you need a whisk anyway it works quite well for mixing the spices together.

Once all the spices are mixed turn your attention to the liquid portion of what is being worked with. In a sauce pan add the water, the vinegar and the sugars and whisk them till the sugar has dissolved.

Retrieve your mixed spices and whisk them into the water, vinegar and sugar mixture that you just made. Take your time and make sure that it is all blended in quite nicely.

Once you have the spices and liquids mixed put it on a low flame or heat and cook for 5 minutes. You don’t even have to wait for a boil, just set it on the flame and set the timer. It really is that simple.

Once the time is up you will whisk the mix again, making sure to get all the mixture off the walls of the sauce pan. Now set it to cook for a few minutes and then place in a glass jar for storage. I am using a jar that once a nut butter in it. Let all set for about 3 hours and then place in the fridge for later use.

The great thing about this recipe is that it is versatile, you could make it sweeter by using 2 tablespoons of sugar instead of just 2 teaspoons. Also, the longer the mix sets up, the thicker and richer the mustard sauce will be.

Enjoy your new favorite mustard that will have your company jealous and wondering where you got such a rich bold mustard. It tastes better than the expensive brands but you wont have to tell them that.
