Rho’s Sausage Casserole

Recipes_From_The_FridgeI was looking for a new kind of dish to make for a wintry night, and had limited choices as to what to use for my main ingredient. Chicken and pork chops were frozen, but then i remembered that I had purchased some fresh market made sausage, great stuff, only four ingredients, pork, salt, pepper, and fennel! from Brickyard Market earlier that week, and it was still there, unopened, and soon the Taste Of Home casserole book was set aside for my own creation….

1 lb fresh sausage
1 cup macaroni
1 large carrot
1 cup broccoli
1 cup cauliflower
1 cup shredded cabbage
1/2 cup milk
3 tbsp flour
water
1/2 cup sour cream
salt, pepper, garlic powder
1/2 shredded Colby jack cheese.

preheat oven to 350 degrees. Cook sausage in skillet or wok till done, prepare macaroni according to directions on package. Stir fry carrots, broccoli, cabbage, and cauliflower and spices into sausage. Mix, flour, milk, and water as for making a gravy, add to sausage and vegetable mix until thickened, then add sour cream. Add cooked and drained macaroni to sausage mix, mix well, and transfer to greased 9×13 pan. Top with shredded cheese, then bake for 1/2 hour.

Recipes_From_The_FridgeWell, I’m sure we’ve all felt the clipper this week, but here is something sweet and warm from Musings to help you heat up this weekend

Maple Blondie

8oz hot coffee
1 tsp maple syrup
1 tsp sugar
Dash of vanilla extract
2 tsp half and half
1 shot of silver rum

How to mix this is very simple. You will first pour the half and half into the mug then add the maple, the vanilla, and the sugar to the half and half. Pour half the coffee you are going to use into the mix, the add your rum, and then stir in to rest of the coffee. A simpler recipe there could not be for a cold winter’s day or any day of the year!

Cancun’s Mexican Grill

One of the tastiest and most fun places along the I-10 corridor is Cancun’s Mexican Grill. It has all the ambiance, from the Futbol games on Azteca Television, complete with ads for Jarritos sodas, your fave cervesas, like Corona, Dos Equis, and other famous names, plus the best signature dishes in the Panhandle. From their complimentary homemade tortilla chips and salsa, to the sweet sopapillas, it just doesn’t get better!

Highly recommended by my entire family are the chicken quesadillas. My husband loves the soft tacos and refried beans, and my son, well, Will, could just handle about everything there, he loves it so much. The menu is vast, and even the lunch menu has much to offer for a great price, and the service is very quick. You’d spend more time waiting in the drive thru lines at any of the quick service restaurant on your food than you will in this full service casual family restaurant. Not only do they offer great noms, but there is are fun musical events every week, from a strolling marichi band to full on guest intereactive karaoke on the weekends. Take a breather away from the beach if you are a visitor, and from your own kitchen if you are a local, because as a local, you already know how good Cancun’s is, and get away for a southeast Mexican getaway, because this isn’t Tex-Mex, this is the good stuff, from the Yucatan to Chipley, right here and now.

Angel’s Buffet and Catering – Chipley, FL

lsI had been in this establishment before, when it was the New Star Chinese Buffet. The new management took this place into a completely opposite direction, and Angel’s Buffet is now a purely Southern and Soul Food restaurant. Advertised as having the “Best Chicken Around”, the chicken did not disappoint! The skin was light, crispy, and not at all greasy. Sadly, on the day I came there, the other offerings were not quite as good.

There was a baked chicken with barbeque sauce that was a bit overcooked and hard to manage. There were only about five or six vegetable choices for a weekday lunch. Butter beans, yellow rice, collards, corn and snap beans. There were egg rolls that were very good plain, even though I do prefer them with duck sauce and Chinese mustard. There were baked sweet potatoes, rolls, and fried cornbread, which was pretty light and crispy, like the fried chicken. These guys and gals got making deep fried food down to an art. There was also an assortment of thin slices over various cakes for sweet options, but I did not partake of those. The sweet tea was light tasting, and not too sweet. On some things, they hit the mark, and on others, some improvement was needed. Another thing that was a let down was the fact that there was a wonderful chicken gravy, but no mashed or new potatoes to put them on. I tried it on the yellow rice, but it was just not quite the same.

TDF Honey Ketchup

Recipes_From_The_Fridge-150x150This ketchup is the very best that I can ever remember tasting. It is clean, light and yet bold as well. It has a smooth flavor that will make you never want to have another type of ketchup ever. This is what the condiment tomato sauce should taste like and is better than any store bought I can remember. Once you try this flavorful to die for ketchup you won’t want another kind ever.

Ingredients for TDF Honey Ketchup

6 oz. tomato paste
1/4 cup honey
1/2 cup rice vinegar*
1/4 cup water
1 tsp. salt
1/2 tsp. finely minced sweet onion
1/4 tsp. garlic powder
1/8 tsp. nutmeg
1/8 tsp. powdered clove
1/8 tsp. powdered ginger
1/2 tsp. basil (can be minced up with the onion)

*I use rice vinegar because white vinegar is made from corn.
